Bring to boil, reduce heat and let simmer until cherry skins have softened, about 15 to 20 minutes.
Blend cooked cherries with immersion blender until smooth.
Smooth cherry mixture evenly on baking sheets lined with silpats.
Put in oven and bake at lowest oven temperature for four to six hours, until fruit leather is no longer sticky to the touch. Remove from oven and let cool.
Once cool, remove fruit leather from silpat and transfer to parchment paper. Trim parchment paper on three sides and roll towards the fourth untrimmed side.
Cut the rolled fruit leather into individual servings using kitchen shears or knife.
